Based on that picture there's no fixing that, the airframe is totaled.

Yeah, salt water is extremely hard on equipment. I doubt that bird or much of what's inside will ever fly again.

Why did both of them loose their nosecone? Is it designed to be breakaway, or is that where they keep the radar and its made of fiberglass and therefore much weaker than the rest of the airframe?

It's the latter. They're basically fiberglass shells designed to deflect air, be transparent to radar, and not come off if they get hit by a bird. A nice wall of water is going to totally wreck it.

Having looked at the various pictures a fair bit, it seems to me that the majority of the expensive stuff is in the fuselage, right? The computers and such things? It looks like that part is water tight, considering how high in the water the P-8 is floating.

Ok, the engines are shot because I assume they went into the water with full reverse thrust on, and so is the wiring controlling the flaps and rudder (maybe rudder?) as they are obviously underwater, but the rest of it? What are we talking about here? Or am I entering finger breaking territory?

You're assuming it stayed water tight after hitting.

If there's anything worth salvaging they probably will, but with the airframe shot it's not worth trying to get the whole thing.

Pretty much this. As part of my day job I've been involved in some salvage/"what do we do after (fill in the blank) happened to my airplane?" events. Components that stayed dey will be salvageable; structure, engines, and anything else immersed in saltwater will probably be written off. It's not so much that you know it's ruined, more that you probably don't have the data to say it's good after such an event.
